Malai Chicken and A Very Happy New Year 2014


I thought we  should greet the new year 2014 in royal style . So here is a very delicious royal malai chicken recipe for you all. This is spicy yummy creamy North Indian specialty dish. Serves  4

Ingredients:
1 kg Chicken 1 kg
1 Onion brown paste
1 cup Tomato paste 
½  cup Yoghurt 
 ½  cup fresh cream 
1 tsp Chilli powder 
1 tsp Ginger paste 
1 tsp Garlic paste 
1 tsp cashew  paste
2  Cloves 
2  Cardamom 
1 Cinnamon stick 
1 Bay leaf 
½  tsp whole cumin and fenugreek seed
½  tsp kasoori methi 
1 tsp dry roasted coriander powder 
½  tsp dry roasted cumin powder 
1  tsp  garam masala powder ( all spice powder ) 
Handful   chopped  fresh coriander 
2 – 3  chopped green chillies, 
½ tsp sugar
½ cup oil 
Salt to taste
Methods of Cooking Heat oil in a pan. Add red chilli powder, cloves, cardamom, cinnamon stick and bay leaf cumin fenugreek seed and kasoori methi. Cook for a minute. Add brown onion onion paste, ginger and garlic paste and fry for a couple of more minutes. Then add the tomato paste and fry for another 5 minutes. Then add the chicken and fry again for five minute. Add green chilies, coriander and cumin powder and salt. Put in a cup of hot water with the chicken, cover and cook for about 15 minutes until it is three-fourth done. Then add the cashew paste and sugar. Stir and cook. When the chicken is almost done, add the cream and cook for a few minutes. When done, add all the spices, coriander leaves and green chilies. Cover and put off the flame and give few minutes standing time. Serve with naan or jeera rice.
