Payesh in Bengali is type of Kheer .The term Kheer (used in North India) may derive from Sanskrit words Ksheeram (which means milk). Other terms like Payasa or Payasam (used in South India) or payesh (used in Bengal region) are derived from the Sanskrit word Payasa or Payasam which also means "milk". Preparation time : 15 minutes Cooking time : 20 minutes Serves : 4 Ingredients : 1 cup Indian cottgae cheese (home made) 1 tsp khoya / milk solid ( optional) 3 cup milk ½ cup condensed milk ½ tsp saffron ¼ tsp green cardamom powder a small pinch sugar to taste Methods of Cooking :Make cottage cheese at home. Boil 3 cup milk till it become 2 cups and then add condensed milk and khoya. Add sugar if you need more sweetness. Mix well. Then add crumbled cottage cheese, cardamom powder and saffron. Boil for another five minutes in medium flame, stir with smooth hand. Put off the flame. Serve chilled.
