Sorshe Ilish / Hilsha Cooked In Mustard Gravy


Sorshe ilish is one delectable signature dish of ilish fish during monsoon. It’s not a dish of regular cooking but bit royal as it is cooked in only oil without using a single drop of water. This is not for those whose heart sinks at the look of the floating oil but for those who are adventures and can deal with high end pungent mouth ticking taste . If you really want to taste the royal queen fish from Bengal cuisine in a traditional royal way then do try this sorshe ilish. I am sure you all will remember this high note taste of sorshe ilish for years to come. This is specially a lunch item served as main course with hot steamed rice. Preparation time  :  10 minutes
Cooking time :  15 minutes 
Serves : 4 to 5 

Ingredients : 
4 to 5 big steak size pieces of ilish/ hilsha shad
4 tbsp mustard green chilly paste 
½  tsp  kalojeera/ kalonji/ nigella 
4 to 5  whole green chilly 
½  cup mustard oil 
½  tsp turmeric powder 
salt to taste
 

Methods of Cooking :

 Clean and wash the fish then pat dry and rub the fish with little salt and turmeric powder. Heat oil in a pan add mustard paste and whole green chilly and salt and rest of the turmeric powder. Stir for a minute. Then slip down the fish in this oily gravy slowly. Let it cook in medium to low flame till the fish is well cooked. Serve with hot steamed rice.
